After weight-loss surgery, noodles are a no go. Pasta is high in carbohydrates, which slows weight-loss, and they tend to swell up in the stomach pouch which makes things uncomfortable. But! Even my carb-loving husband gobbles up a plate of zucchini noodles. When he called on his way home from work for the daily “what’s for dinner?” phone call, he was super excited when I responded “Zucchini Pasta.”
I use a Serrated Peeler from the Pampered Chef for only $11. Well, well, WELL worth the investment. There may be other retailers for a serrated peeler, this is just the one I have! 🙂
Zucchini Pesto Pasta
Ingredients
- 2 zucchinis
- 1 pint cherry tomatoes
- 1 tbsp sun-dried tomato pesto can substitute basil pesto
- 12 oz pre-cooked chicken breast, diced
Instructions
- Heat the pre-cooked chicken in the microwave for 1-2 minutes. Meanwhile, using a serrated peeler or other spiralizer tool, begin peeling the zucchini into noodle strands, stopping at the seeds.
- Cut the cherry tomatoes in half and set aside with the zucchini. Once the chicken has been heated, place on a cutting board to dice. Move the zucchini noodles and tomatoes into a microwave safe bowl. Add the pesto. Microwave for 4 minutes.
- Add in the chicken cubes and toss it all together. Serve immediately.
