While you absolutely want protein to be 50-70% of your meal, don’t forget to keep fun flavors in your side dishes! This helps keep excitement in your diet while you enjoy new flavors and textures. Vegetables also provide vitamins, minerals and fiber to your diet.
Many patients of mine struggle with liking veggies. They just never have. I challenge them to try new things and keep it fresh when possible for the best tasting results. I think you’ll really enjoy this refreshing Cucumber Tomato Salad!

Ingredients
- 1 cucumber, peeled and sliced
- 2 Roma tomatoes, cut into chunks
- 1/3 cup chopped red onion
- 1/2 cup fresh basil, chopped
- 1 tbsp olive oil
- 1/4 cup apple cider vinegar
- 1 tbsp natural no calorie sweetener optional
- salt & pepper to taste
Instructions
- Mix all ingredients together.
- Let marinade 30 minutes before serving.
