Shrimp Jalapeno Poppers

 

Yes………..I did just post a Superbowl Appetizer featuring turkey bacon. I am not embarrassed. Repeating to self “I am not embarrassed.”

This recipe I cannot take credit for. Oh no. This belongs to one Kevin Wagner- lover of jalapeños. He dreamed up this recipe back in the fall for a picnic dinner with friends before going through a haunted corn maze. For sake of one K. Wagner, I will refrain from describing his reaction to aforementioned haunted corn maze.

We grilled our jalapeño poppers that night, but tonight I used the broiler. I preferred the grill but both methods work great.

 

Turkey Bacon Wrapped Jalapeno Poppers

Ingredients

  • 10 jalapenos, halved and seeded
  • 10 tbsp low-fat cream cheese
  • 10 oz shrimp, cooked, tails removed
  • 5 slices turkey bacon

Instructions

  • Place turkey bacon on a microwave safe plate in a single layer. Microwave for 2 minutes.
  • Meanwhile, place jalapeno halves on a baking sheet or baking stone. Scoop approximately 1 tablespoon fat-free cream cheese in each pepper half. Add 2-3 pieces of shrimp per pepper.
  • Remove turkey bacon from microwave and wrap each pepper with bacon.
  • Place peppers under the broiler for 10-12 minutes.
