Simple Sauteed Zucchini Squash
This is one of those recipes that seems so simple, I forget to write down the recipe. Much less share it with you! For some of you, this will not seem like a big deal. For others, this super simple yet tasty way to get a vegetable on the table is going to be one of your new favorite go-tos! I serve this often, especially when I can’t find any good looking fresh green beans. I often use this same recipe on the grill using a grill basket. Stove top is super quick and easy to clean up. Can’t beat it!
Simple Sauteed Zucchini Squash

Ingredients
- 2 zucchini, cut into bite size pieces
- cooking spray
- 1/4 tsp each salt and peper
- 1 tsp lemon juice (optional)
Instructions
- Heat a skillet to medium-high heat; coat well with cooking spray.
- Toss together zucchini, salt & pepper and lemon juice. Add to skillet.
- Saute squash for about 8-10 minutes, stirring and turning sides on occasion. Squirt a small amount more of lemon juice if desired; salt and pepper as desired too.
Notes
*Pair this recipe with a protein based entree.
