Last week I received a fun “summer snacking package” in the mail from Laughing Cow Cheese. I know you have heard of Laughing Cow! An abundance of yummy flavors (Creamy Swiss…Garlic and Herb…Queso Fresco & Chipotle) and the creamy consistency is the best. Ahem, especially at 35 calories a wedge!Â
In the past I have used Laughing Cow for stuffed mushrooms…they are delicious and cuts out the need for cream cheese or other high fat ingredients. With this package, I was charged with making a fun new recipe with the products for the summer! I was sent three flavors, so I am challenging myself to come up with a fun new recipe for each.
First up: Queso Fresco & Chipotle Laughing Cow Cheese. A fun and rich flavor with a slight amount of heat. My taste testers loved it (yes- mom and husband). I decided to make a creamy steak topping for this first go around. Although I did put the leftovers on my husbands sandwich today…and will likely be adding it to our eggs tomorrow morning. So many great uses!
Queso Fresco & Chipotle LC + Fresh Cilantro + 2 chipotle peppers blended….on top of a sirloin steak. So good! I’d love for you to leave a comment with YOUR favorite way to have Laughing Cow! Outside of making meals…I love it with carrots : )
