Caesar Grilled Pork Chops

Simple ingredients, big flavor
Oh yes! I should grill the other white meat!
When it comes to grilling season (my favorite) I often forget to give pork chops much attention. I usually go for the usual chicken or burgers because you can change the flavors so easily. Then I grill pork chops and think “oh yes! The other white meat!”
I really love the flavor of grilled pork chops. When you cook it to the right temperature (140 F) and not overcook the meat, it has wonderful flavor and texture.
For this high protein, bariatric friendly dinner I simply brushed on a light Caesar dressing before grilling and a little more after grilling. The grill itself brought wonderful flavor and the Caesar dressing was enough to give it more excitement and change the pace. This recipe could easily be re-created with buffalo sauce, barbecue sauce or honey mustard.
I choose the thicker cut of bone-in pork chops (purchased from Aldi, delivered to me thanks to Instant Cart my love language). The pork chops will have a layer of fat on the edges and trimming them prior to cooking will reduce the fat content considerably. Leaving the fat on during cooking will enhance flavors and will bring in some fat to the nutrition profile. Should you choose to do that, just trim the fat after the pork is cool enough to handle.

Caesar Grilled Pork Chops
Ingredients
- 4 bone-in pork chops
- 1/4 tsp pepper
- 1/4 tsp salt
- 4 tsp light Caesar dressing
Instructions
- Heat outdoor grill to 450F.
- While grill is heating, trim visible fat from pork, then season with salt and pepper. Use a brush to spread 1/2 tsp of dressing on each side of pork.
- Grill pork for 10 minutes, flipping once halfway through. (10 minutes for a 3/4 inch thick pork chop, adjust time to more or less depending on thickness). Use a meat thermometer to check temperature is 140F before removing.
- Brush remaining dressing over top of pork and allow to rest 3 minutes before serving.
