Fresh flavors is what it’s all about in the summer. This is my first summer to grow basil and I feel like an absolute green thumb wiz but let’s not talk about the other 5 herbs I planted….

Tossing together this pineapple salsa is a breeze and the flavor is just wonderful. Make plenty and save it for another night to add to your taco salad, baked chicken or grilled steak!

Ingredients

  • 4 tilapia fillets, thawed if using frozen
  • 2 tsp ground cumin
  • 1/4 tsp cayenne powder
  • 1/2 cup chopped pineapple
  • 2 tbsp cilantro
  • 1/2 jalapeño, seeded and chopped (optional)
  • 3 tbsp fresh lime juice
  • 1/2 cup diced red onion
  • 1/4 cup fresh basil, sliced

Instructions

  • Heat oven to 350F.
  • Combine cumin and cayenne together and rub on tilapia fillets. Set in the bottom of a casserole dish and bake for 25 minutes or until flakey.
  • While tilapia is baking, combine pineapple, cilantro, jalapeño (if using), lime juice, red onion and basil. Set aside.
  • Remove tilapia to serving plates and top with pineapple salsa.
