French Onion Soup Meatloaf
It’s that time again!!!!!
I have my Sister-in-law, Michelle, to thank for this idea! She sent me a picture of a recipe with this title on Pinterest and said “thinking of you!” This of course made my laugh out loud, while at the same time elate me with excitement of a possible new meatloaf in my life!
I google for recipes like the one she sent and ultimately threw a few things together in a bowl and called it “French Onion Soup Meatloaf.” This is quite possible the most simple way to about this recipe, but that’s how I like it. You can get more creative and you can search for other recipes just like it! For me, canned French Onion soup, ground beef and parmesan cheese sounded like the way to get started.
Meatloaf recipes are perfect for bariatric surgery patients. I substitute grated Parmesan cheese instead of breadcrumbs, crackers or oats in my recipes. You can make them smaller by using a meatloaf pan or just half the recipe into two loaves, like I did for this meal. This allows it to cook much faster and can shave about 30 minutes off your cook time.
Take small bites and eat slowly to feel comfortable after eating such  solid protein. This will allow Gastric Sleeve and Gastric Bypass patients to fill up on good protein and stay satisfied for hours…which leads to wonderful weight-loss results. Happy eating!!!!
French Onion Soup Meatloaf
Ingredients
- 1 lb 93% lean ground beef
- 1/2 can French Onion Soup
- 3/4 cup reduced fat grated parmesan cheese
- 1 egg
- 2 tbsp reduced sugar ketchup
Instructions
- Preheat oven to 350F.
- Mix the beef, soup, parmesan cheese and egg together in a bowl until combined.
- Form into two loaves and place in the bottom of an 8x8 baking dish.
- Bake for 25 minutes. Add a little ketchup on top and bake 5 minutes more. Serve with green beans or other veggies.
