Cilantro Lime Cauliflower Rice

 

Bariatric friendly Mexican side dish


No doubt about it, cilantro lime rice is a bit time favorite for most people! Okay sure, unless you don’t like cilantro but why would you be reading this if you didn’t??

After weight loss surgery, rice isn’t recommended for a handful of reasons. The two largest reasons? 1 ) The high carbohydrate content drives hunger up and stalls out weight loss. 2) The swell effective a grain of rice takes on from liquid makes it uncomfortable in most post-op pouches.

Cauliflower has really come on the scene in recent years as a great option for low-carb alternative to favorite meals.

For the longest time I hesitated to make riced cauliflower recipes because of the work involved. By the time the cauliflower was cooked, the smell had taken away my appetite to enjoy the meal!

Now that several brands offer a frozen steamer bag that allows you to add “rice” to a meal in an instant my creativity on cauliflower has really expanded. This recipe is one example!

Cilantro Lime Cauliflower Rice

Ingredients

  • 10 oz bag frozen riced cauliflower
  • 1 1/2 tbsp chopped fresh cilantro
  • 1 tbsp fresh lime juice
  • 1/4 tsp sea salt

Instructions

  • Steam cauliflower rice per package instructions.
  • While cauliflower cooks, chop cilantro. Remove cauliflower from microwave, open bag and let steam release.
  • Move cauliflower to a medium bowl. Add cilantro, lime juice and salt. Stir to combine flavors.
