Chicken Pesto Lettuce Wraps – WLS Recipes
I’m a fan of lettuce wraps. I get strange looks when I recommend them to a client, but that’s pretty much par for the course anyway. I sometimes hear comments like “I’m not a rabbit” or “Seriously? What’s the point?”
When you think about it, the flavor of a sandwich or a wrap is not in the bread or the tortilla. It’s in the meat, cheese, veggies, toppings, etc. When you eat a hamburger it’s more about the meat and the toppings. It’s just getting used to eating it with a fork instead of your hands. Same with lettuce wraps. It’s just getting used to working with lettuce (and having a bit more mess if you’re like me) than with a tortilla. You still get the best part of the wrap- the inside!
This is a Pesto Chicken that will not take long to put together and you can make a large batch of it for lunches. We ate ours for dinner and both have lunch today! Time and money saver. Done and done. A little something different than a deli meat rollup or a basic chicken salad (which I also love).
Chicken Pesto Lettuce Wraps - WLS Recipes
Ingredients
- 6 romaine lettuce leaves
- 1/4 cup jarred pesto
- 1/2 cup fat-free plain Greek yogurt
- 2 cups cooked & chopped/shredded chicken
- 3 slices lowfat colby jack cheese, halved
- 1 tomato, sliced
Instructions
- Combine pesto sauce and Greek yogurt. Stir in chicken.
- Tear cheese slice in half and lay inside lettuce leaf. Scoop chicken mixture on top and tomato if desired.
