Cauliflower & Cheese Bake
Cauliflower recipes are not always my favorite. For every 10 recipes I make using Cauliflower, I might end up liking 4 or 5 of them. To me it’s a strange texture without much flavor. It can also leave my recipes a little watery until I get it just right.
For that reason I encourage you to keep trying cauliflower recipes until you get it the way you like it. If I’ve learned anything, it’s not to give up on this vegetable! If I had given up, I would never have found my favorite Creamy Mashed Cauliflower recipe or this Cauliflower and Cheese Bake. Some vegetables take time to understand, but when you can get on the same page…you’ve just opened the door to so many more low-carb and healthy meal options!
Cauliflower & Cheese Bake

Ingredients
- 1 bag steamed cauliflower or head of fresh cauliflower, chopped and steamed
- 1 small onion, chopped
- 1/3 cup grated parmesan cheese
- 2 tsp dry mustard
- 2 tbsp unsweetend, unflavored almond milk
- 1/3 cup reduced fat cheddar cheese
Instructions
- Steam cauliflower in microwave per package instructions. Preheat oven to 350F.
- Meanwhile, sauté onion on medium high heat over the stovetop. Add 2 tbsp grated parmesan cheese and stir. Add shredded cheese and almond milk and stir.
- Toss cooked cauliflower into the skillet and fold ingredients together until cauliflower is topped with cheese mixture. Remove to an 8×8 baking dish
- Spread cauliflower mixture in baking dish and sprinkle with remaining parmesan cheese. Place in oven and bake for 20 minutes.
- Remove from oven and let cool before serving.
