Blue Cheese Mini Meatloaf

 

Can you tell I enjoy meatloaf?! If it has turkey bacon or meatloaf in the title- I’m a sucker for it. Mini meatloaves are even better because they cook fast and not as messy as cutting into a regular meatloaf.

These cups came out even better than I had thought. Kevin even said it was TOP FIVE material- this is big people.

I promise I’m branching out of the world of meatloaves. On occasion.

Blue Cheese Mini Meatloaf

Ingredients

  • 1 lb 93% lean ground beef
  • 3/4 cup crumbled low fat blue cheese
  • 1/2 cup diced onion
  • 1/2 cup grated parmesan cheese
  • 1/2 cup chopped fresh spinach
  • 2 eggs

Instructions

  • Preheat oven to 375 and spray a muffin pan with cooking spray.
  • Combine ground beef, blue cheese, onion, parmesan cheese, spinach and eggs. Divide mixture evenly in muffin pan cups.
  • Bake for about 30 minutes or until no longer pink inside.
