Sun-Dried Tomato Baked Chicken
I love sun-dried tomatoes!!! So much that I don’t get bothered by the $4 jar anymore. Especially when it’s such a simple meal like this one- the cost of the other ingredients is low so my meal is still inexpensive and highly delicious. Have you tried the Sun-Dried Tomato Meatloaves yet? I like to think of it as one of my “best hits.”
I have made this recipe with both pork tenderloin and chicken breast. It’s very simple and very flavorful. It also reheats well! I froze this meal for the week I was going to be gone for my husband to reheat. He reported back: it was still awesome. So a great meal to fill in your freezer if you have a busy week coming up!
Serves great with a side salad or a roasted veggie like brussels sprouts or green beans.

Ingredients
- 4 (4 oz) chicken breasts cut in half if thicker than 1 inch
- 1/4 cup jarred sun-dried tomatoes, rinsed and chopped
- 4 cloves garlic, pressed or minced
- 2 tbsp dried basil
- 1/4 tsp each salt and pepper
Instructions
- Heat oven to 375F. Sprinkle chicken with basil, salt and pepper and rub in all sides of the meat.
- Heat a skillet to medium high heat and coat with cooking spray. Sear all sides of chicken; about 2 minutes. Place in oven safe baking dish.
- Top chicken with chopped garlic and sun-dried tomatoes. Bake for 20 minutes or until internal temperature reads 165 F.
