Mushroom Bruschetta Chicken
I found this recipe on the Kraft Foods website – one of my favorite online recipe sites! This is a great weeknight dinner that comes together quickly and gives a great flavor…if you like mushrooms that is. Mushrooms = Food Controversy. You love ’em, or you hate ’em!
Mushroom Bruschetta Chicken

Ingredients
- 1 lb chopped fresh mushrooms
- 1 medium onion, finely chopped
- 1/4 cup light balsamic vinagrette dressing
- 1 clove garlic, minced or pressed
- 1 tsp fresh thyme, chopped
- 1 lb boneless, skinless chicken breast butterfly chicken if more than 1/2 thick
- 1/2 cup 2% shredded mozzarella cheese
Instructions
- Cook mushrooms and onions in a large nonstick skillet; stirring occasionally, until onions are translucent.
- Add dressing, garlic, thyme and cook for 5 to 7 minutes. Remove from pan and keep warm.
- Add chicken breast to skillet and cook on each side 5-8 minutes or until done (165F).
- Top chicken with mushrooms mixture and shredded cheese; cover. Cook 2 to 4 minutes until cheese is melted.
