It almost seems silly when I sit down to type up a recipe and realize it was only three ingredients. Am I missing something? Was that really all I used?
In this case, it’s absolutely true. It’s why I often keep pork tenderloin on my grocery list because it brings in new flavors and only needs a different topping to change things up!
Pork can be a tricky meat to prepare because it does get tough quickly. Thankfully the cook time was brought down to 145 degrees years ago which means we now know it’s safe to consume pork without needing it to overcook.

Pork in the Instant Pot
I have found for one pound of pork tenderloin, 8 minutes at high pressure produces a good texture.
You can also cut the pork in half and cook it for 5 minutes instead.
As long as you have one cup of liquid in the bottom of the pot, you can change up the flavor. This time I used pesto and it was fantastic! I highly recommend the fresh Pesto from Costco if you happen to shop with them. Any jarred pesto is great and you can also find different flavors such as sun-dried tomato pesto to continue to change the flavors.

Instant Pot Pesto Pork Tenderloin
Ingredients
- 1 lb lean pork tenderloin
- 2 tbsp prepared pesto
- 1 cup chicken or beef broth
Instructions
- Spread pesto all over pork tenderloin. Pour broth into bottom of pressure cooker. Place pork inside the pot.
- Secure lid and close valve to the sealed position. Select high pressure for 8 minutes. Allow to naturally release for 10 minutes.
- Move valve to venting to release any remaining pressure. Remove lid from the cooker and remove pork to a cutting board. Slice into 1 inch pieces and serve.
