Dijon and Thyme Pork Tenderloin

Ingredients

  • 1 lb lean pork tenderloin
  • 2 tbsp dijon mustard
  • 1 tsp dried thyme leaves
  • 1 small sweet onion, sliced thinly
  • salt & pepper to taste

Instructions

  • Heat oven to 400 F.
  • In a small bowl, stir together mustard and thyme. Coat pork with mustard mixture.
  • Place sliced onion in a thin layer on the bottom of a baking dish. Place pork on top of onion.
  • Cook for 20-25 min or until internal temp reaches 145 F. Remove from oven, let sit a few minutes. Slice and serve.
