Easy Slow Cooker Pulled Pork

 

Okay, if you haven’t tried this classic slow cooker recipe…it’s darn well time.

I recommend using a pork tenderloin because it’s so lean. It will be a little more difficult to shred because of this, but it’s worth it to save on fat calories. Choose a low sugar barbecue sauce (less than 6 grams per serving is a good goal) and put it on the side to keep portions small. Dip your fork in the sauce for each bite instead of smothering. Yes, I know it’s better that way. There’s no argument there!

Ingredients

  • 1 lb pork tenderloin
  • 1 can beef broth (14.5 oz)
  • 1 whole onion, sliced
  • 1/2 cup barbecue sauce plus some for dipping

Instructions

  • Place pork tenderloin in the bottom of a slow cooker.
  • Mix barbecue sauce and beef broth together and then pour over pork tenderloin.
  • Let cook on Low for 6-8 hours. Shred with 2 forks and serve.
