Crispy Bacon and Egg Salad (in a Tomato)
Once again I have Kraft Foods to thank for this recipe creation. I made just a few substitutes to save on fat and make this a bariatric friendly recipe (turkey bacon and fat-free mayo namely).
I love putting a scoop of egg salad inside a tomato. It’s pretty and makes it more fun than eating by itself. Although no judgment if you do!Â
This recipe is softer, although very filling because it is a thick egg salad. Packed with protein and filled with flavor, I’d use this recipe for a lunch or a dinner. This is one of those dinners that I thought would have leftovers but Mr. W enjoyed it too much for that to happen.
**Note: I was able to create this recipe using only my microwave. I had two secret weapons to do this.
1) I made my hard boiled eggs in my Microwave Egg Cooker. I made two batches so they took 10 minutes a piece. This allowed me to change out of my work clothes, clean the kitchen and take the dog out. Aff link:Â Nordic Ware Microwave Egg Boiler
2) I use my Small Ridged Baker (a Pampered Chef item) to microwave the turkey bacon. I did two batches of this too and they take 4 minutes a piece. I was able to chop my celery and prep my tomatoes while they cooked.

Ingredients
- 6 hard boiled eggs, chopped
- 4 slices turkey bacon, cooked and chopped
- 1/2 cup chopped celery
- 1/4 cup fat-free mayo OR light miracle whip
- 4 Roma tomatoes, cut in half and center removed
- 1/2 tsp each sea salt and pepper
- leafy greens *optional
Instructions
- Cook eggs and turkey bacon first using preferred methods.
- While eggs and turkey bacon are cooking, chop celery and cut tomatoes in half, scooping out the center.
- Peel and chop eggs, dice turkey bacon and add to a bowl. Add celery. Stir in fat-free mayo, salt and pepper.
- Using a cookie scoop or two spoons, spoon the egg salad into Roma tomato halves. Serve on lettuce if desired.
