Ingredients

  • 1 rotisserie chicken, skin and bones removed and meat diced
  • 3 hard boiled eggs, chopped
  • 4 stalks celery, chopped
  • 1/3 cup fat-free mayonnaise
  • 2 tbsp sweet pickle relish
  • 1/4 tsp each salt and pepper
  • 1 large cucumber, sliced

Instructions

  • Mix all ingredients together. Adjust ingredients to taste.
  • Spoon one tablespoon on each cucumber slice.
  • Save remaining chicken salad by sealing and refrigerating. Good for up to seven days.

Notes

If fat-free mayo is unavailable, look for light mayo. You could also do half mayo and half plain Greek yogurt.
