Eggs are a very controversial food for post-op bariatric surgery patients. Patients love them for their protein, flavor, convenience and cost…or HATE them and get frustrated with what to eat for breakfast.

Chances are, if you’re reading this blog, you are in favor of eggs. Yay! This is a great recipe for an easy, yet classic omelette. Gastric Sleeve and Bypass patients rejoice!

Omelets for me have always been a tricky beast. They always look messy and end up becoming a “scramble” instead of a true omelette. This recipe will show you a trick for keeping your omelette fluffy and light, and easier for fold over. Keep reading…[groups_non_member group=”Premier Access”]…

For me the trick is putting a lid over the skillet until the eggs are nearly set. Then I add a bit of cheese and slowly fold the egg over using a rubber spatula. 90% of the time I get a good fold. 10% of the time it looks a bit wonky but still tastes great. I’ll take those odds!

Ingredients

  • 2 eggs
  • 2 slices deli ham, diced
  • 1 tsp green onion, thinly sliced
  • 1/4 tsp black pepper
  • 1/4 cup 2% cheddar cheese, sliced

Instructions

  • Whisk eggs in small bowl. Stir in ham, onions and pepper.
  • Pour into 8-inch nonstick skillet and COVER! Cook on medium heat about 5 minutes or until egg mixture is set but top is still a little wet.
  • Sprinkle cheese onto half the omelet; fold in half using a rubber spatula. Remove from heat; let stand, covered, 1 min. Cut in half and serve.
