Cajun Seasoned Stuffed Chicken Breast

 

Cajun Stuffed Chicken. Low carb and weight loss surgery friendly!

I got this recipe off a blog a long time ago and modified it a little. I really, really loved it and wish I could remember who I can give credit to for this great idea! I replace the breadcrumbs with parmesan cheese to keep the starch content down. Great way to change up the same ol’ chicken breast!

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup fresh spinach leaves
  • 2 oz shredded monterey jack cheese
  • 2 tbsp Cajun seasoning
  • 2 tbsp grated parmesan cheese
  • 1/4 tsp olive oil

Instructions

  • Pound chicken breast to 1/2 inch thickness.
  • Mix spinach and shredded cheese in a separate bowl.
  • Put spinach leaves in the inside of chicken breast and roll up, securing with toothpick.
  • Mix grated parmesan cheese and Cajun seasoning together. Put a small amount of olive oil on the chicken breast and spread with fingers. Coat the chicken breast with seasoning mixture.
  • Cook chicken for 30 minutes in an oven preheated to 350 F.
